Spinach Yogurt Dip

Dipping raw vegetables, bread, chips and other dip-able foods into this tasty, but easy, dip will leave you with a healthy dose of vitamin A, Vitamin C, Calcium and Iron!

16 oz. frozen chopped spinach (defrost it and squeeze any excess water from the spinach)
2 cloves garlic, minced
2 teaspoons lemon juice
1/4 cup chopped chives
1/4 cup chopped fresh dill
A handful of crumbled low-fat feta cheese 
8 ounces plain non-fat Greek yogurt
Olive oil
 
Instructions:

  1. Steam the spinach with one minced garlic clove
  2. Let the spinach cool and add the rest of the ingredients with the exception of the Greek yogurt
  3. Once everything is mixed, stir the Greek yogurt in
  4. Drizzle with a little bit of olive oil just before serving
Nutritional information for the whole bowl of dip (approximately): calories 470, fat 21g, saturated fat 6g, protein 38g, carbohydrates 44g, fiber 16g, sodium 1070 mg.
