White Bean and Avocado Sandwich
1/2 (7.5 oz.) can of Cannelloni beans (rinsed & drained)
2 tsp. Olive oil
A few dashes of black pepper
4 slices whole wheat bread
½ small onion, sliced
1 cucumber, sliced
½ Avocado (pitted & sliced)
In a medium bowl, combine the beans, oil, and pepper. Mash the mixture with the back of a fork. Divide the mashed beans among the slices of bread. Top with onion, cucumber and avocado. Makes 2 servings
